1 Chocolate and pears cake (Alberto) Torta di cioccolato e pere Ingredients: 5 eggs 150 grams of butter 250 grams of flour 00 1 packet of baking powder 150 grams of powdered sugar 2-3 diced pears 1 pinch of salt 150 grams of dark chocolate 1 tablespoon unsweetened chocolate powder Ingredienti: 5 uova 150 grammi di burro 250 grammi di farina 00 1 busta di lievito per dolci 150 grammi di zucchero a velo 2-3 pere a cubetti 1 pizzico di sale 150 grammi di cioccolato fondente 1 cucchiaio di cacao amaro in polvere

2 Preparation: Mix 5 egg yolks with the butter, flour and baking powder (already mixed before). Preparazione: Mescolare 5 uova con il burro, la farina ed il lievito per dolci (già mescolati prima)

3 Add a pinch of salt and 150 grams of powdered sugar If the mixture is too solid add a half cup of milk. Aggiungere un pizzico di sale e 150 grammi di zucchero a velo. Se l’impasto è troppo solido aggiungere mezza tazza di latte.

4 Whisk three whites of egg and add to the mix the pears (previously floured) Monta a neve gli albumi e aggiungere all’impasto le pere (precedentemente infarinate)

5 mix the whites of egg, dark chocolate (melted before in a water bath) and the bitter chocolate powder. Mescolare gli albumi, il cioccolato fondente (sciolto prima a bagnomaria) ed il cacao amaro in polvere.

6 Line with baking paper a mold for cakes, pour the mixture and bake for one hour at 180 degrees in the oven. Foderare con carta-forno una forma per torte, versa l’impasto e cucinalo per un’ora a 180 gradi nel forno.
