3 Presentation It was the first time we have supervised a Comenius 1 work group concerning specific topics in the field of catering. However, it has been a pleasure to work with and link the ideas of the students who have had the chance to participate in this experience. Nothing was established a priori, and nothing was fixed rigidly. The best thing about the project is that the entire work was carried out creatively depending on the interests and self motivation of the students taking part in the project. So it doesn’t really matter to us if the work has a few defects in its written form or oral exposition. Our most important aim was to get the students to speak the foreign language in meaningful and authentic contexts and avoid translation from their mother tongue. This was made possible because of the reciprocal exchange between students in the hosting families, which offered them the concrete opportunity to practice English and French in the daily routine of the host country. Everyone was able to learn something new from this experience, therefore enriching his or her cultural and social background.

18 Lesson - The Mediterranean Diet The discovery of the Mediterranean diet is attributed to the nutritionist Ancel Keys. He noticed that cardio-vascular illnesses, widespread in his own country, were quite rare. In fact, among the population of Cilento there was a particularly low incidence of the so called "diseases of affluence" (arteriosclerosis, hypertension, diabetes). This was a sensational discovery that led American scientists to set up in the 70s a widespread program of preventative medicine based on the studies conducted by Keys in Cilento. Thus followed the international success and popularity of this diet consisting of whole and natural foods, essential for the health of the individual. The basic elements of this diet are cereal (bread, pasta, polenta), legumes, vegetables, fruit and olive oil. Normally the word "diet" carries a negative connotation, associated with limited food, or an excessive increase in "fat" in the body. Instead if we look up at the etymology of the word "diet" in the dictionary, we find that it originates from a Greek word with the meaning of "life, lifestyle, way of living". In fact eating is one of the fundamentals of our life and being more aware of it can help us to live better and longer. Today all doctors agree on prescribing a diet based on a Mediterranean model, that appropriately divides the daily calories for the different nutrients in order to prevent the beginning of the "diseases of affluence".

19 Lesson - The Traditional Mediterranean Diet Pyramid

Slow Food was founded in Bra, in the Italian region of Piedmont in July 1986. The international movement was founded in Paris in 1989 when Slow Food delegations from around the world met in Paris, where they approved the Slow Food Manifesto. The manifesto states: ‘Let us rediscover the flavours and savours of regional cooking and banish the degrading effects of Fast Food. In the name of productivity, the Fast Life has changed our way of being and threatens our environment and our landscapes’. The manifesto contains a very clear message: Slow Food is a movement for the protection of the right to taste and pleasure against the tide of standardization of taste and the manipulation of consumers around the world. The second point of the Slow program advises you to go slowly, take your time, have a break and find a friend who can provide food and hospitality. So the snail was chosen as the movement’s symbol. With this in mind, Slow Food is working to protect the historic, artistic and environmental heritage of places of gastronomic pleasure (cafés, inns, bistros). It is also working to safeguard the food and agricultural heritage (crop biodiversity, artisan techniques, sustainable agriculture, rural development, food traditions).

21 Lesson - The Slow Food Movement Slow Food has grown into a large-scale international movement, with over 60,000 members in all five continents. Slow Food's main offices, situated in Bra (Cuneo), a small town in southern Piedmont, employ about 100 people. They are the hub of a close-knit network of local grassroots offices in Italy and abroad, the so-called convivium. Over 700 convivia exist in 83 countries; 330 of them are in Italy, where Slow Food boasts more than 35.000 members. Since its foundation, Slow Food has thus blossomed into an international movement of food and wine culture and a champion of biodiversity, hence of sustainable agriculture and rural development. In 1990, the association founded a publishing company, Slow Food Editore, to promulgate its ideas. Publications focus on tourism, food, wine and agriculture. The company’s catalogue now boasts over 70 titles. They organize not only theme dinners, food, wine and beer tastings and walking tours, but also participate actively to safeguard or revive traditional agricultural methods and techniques. Slow Food also organises a number of prestigious national and international events. These include the Salone del Gusto, the world’s largest quality food and wine fair, held every two years at the Lingotto Exhibition Centre in Turin, and Cheese, a major biennial cheese fair held in Bra.

On the basis of our research on the Mediterranean diet and the Slow Food movement, we decided to carry out a survey based on a questionnaire concerning Italian food habits. The questionnaire was composed 15 questions divided into 4 areas. The first area concerns general characteristics such as the sex, age and occupation of those surveyed. In the second part is called “YOUR TASTES”, 5 questions where we ask how much food is important in life, favourite foods and food they don’t like. The third part is called “FOOD DIET”. In this area we determine the frequency of consumption. The last area we considered is “YOUR MEALS”, where we treated the daily meals. The questionnaire was proposed mainly to adults and young adults; what emerged is that food is important for the majority. While 90% of those interviewed are not vegetarian, most have only tried Chinese food apart the Italian food.

At the top of the list of favourite foods we find pasta (37%), followed by meat and pizza. Food that many don’t like are vegetables (41%) followed by fish.
